Today we are sharing an eggless recipe for pancakes.

We don’t eat eggs but we love our desserts so after a lot of trial and errors, failures and success, we have finally got our go-to pancake recipe. These pancakes are not just super simple to make but also equally delicious and soul satisfying. They are light and fluffy and you won’t even notice it is eggless. To make it even softer, replace milk with buttermilk.

The key to good pancakes is cooking them correctly. Pour the batter on a hot pan, so that as soon as it hits the pan it starts cooking. Next, be patient and don’t rush it. No need to spread the batter. Pancakes are not supposed to be thin. Let it cook properly on the first side. Do not flip it until it is filled with bubbles.

Recipe: makes 4 pancakes

Ingredients:

  • 1 cup All purpose flour/maida
  • 2 tbsp powdered sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tbsp butter
  • 3/4 to 1 cup milk
  • 1 tsp vanilla essence

Instructions:

  1. In a bowl, take your dry ingredients i.e, flour, sugar, baking powder and baking soda.
  2. Mix them together.
  3. Mix butter, milk and vanilla essence together. (add 3/4 cup milk at this stage, add more if needed later)
  4. Pour the wet mixture into your dry mixture.
  5. Combine well so that you don’t have a lot of lumps.
  6. Add more milk if needed to make a smooth batter.
  7. Let it rest for 10 minutes.
  8. Heat up a pan and grease it a little.
  9. Pour a ladleful of your batter on the pan.
  10. Let it cook until it has a lot of bubbles. Don’t rush it
  11. Flip it and let cook on the other side for about 1 minute.
  12. Repeat for rest of the batter.

Your pancakes are ready to devour! Serve warm.

Serving suggestions:

Here are some ideas to serve your pancakes with- pancake on plate

  • My go to topping for pancakes is fruit- banana or strawberries work the best. (Can also add a drizzle of chocolate sauce to fruit)
  • Maple syrup with pancakes need no introduction. lol.
  • Put on a dollop of ice cream on top, with a drizzle of chocolate sauce.
  • Top it with a generous spread of nutella or any chocolate spread.
  • Another yummy topping for pancakes is whipped cream. Heaven!

Combine two of more of these and enjoy!

While fruit is the healthiest topping of all, I can never choose a favourite out of these. Each one is equally amazing and my mouth is already watering.
