Major missing especially during this lockdown period when we want something sweet but don’t really have a lot of options.
We were also craving all kinds of yummy desserts and it was also my brother’s birthday. So we decided to take the matter in our own hands😂
Here’s an easy way to satisfy your sweet tooth without missing out. This easy and versatile recipe is going to be a fam favorite. This is so easy that even those who never bake can make it.
You can easily modify it as per your taste and pantry.
Lot of us don’t have a lot of ingredients lying at home right now. We had no cocoa powder, but you can add if you have it. Instead we made a chocolate glaze by melting last of the chocolates that we had in the freezer, but it is optional. It still tastes amazing without it. Adding walnuts took it to just another level!!
Another cherry on this cake is that it doesn’t require an oven. Although you can bake the same batter in oven if you have one, but we made it on stove and we have no complaints. It was super delicious and perfectly cooked.
We made two layers for our big family. If you want, you can easily double the recipe and make it in two batches for the same.
Let’s get started.
Ingredients:
For the cake:
- 2 cup all-purpose flour (Maida)
- 1/2 cup butter, plus a little for greasing (melted, but not hot)
- 400 ml condensed milk
- 1.5 tsp vanilla essence
- 1 tbsp powdered sugar
- 300 ml or 1.25 cup milk
- 1/2 tbsp vinegar
- 1 tsp baking powder
- 1/2 tsp baking soda
- Chopped walnuts (or any nuts/dried fruit of choice)
- Pinch of salt (skip if using salted butter)
For the chocolate glaze:
- 1/2 cup milk
- 1 cup of chocolate, chopped
- Walnuts/any nuts or dried fruits for topping
Method:
For the cake-
- Take a cake tin. Apply some butter/oil inside it and dust it with all purpose flour. Tap the excess flour and keep the tin aside.
- In a cup, mix milk and vinegar.
- Take a bowl and mix all of the dry ingredients together. (Maida, sugar, baking powder, baking soda and salt)
- In another bowl, mix rest of the wet ingredients. (Butter, condensed milk, vanilla essence)
- Now, carefully mix the dry and wet ingredients together.
- Add the chopped walnuts and milk-vinegar mixture to this mixture and combine well.
- Transfer the mixture to your greased tin.
- Heat the pressure cooker (empty) over a tava, covered with the lid but without the pressure/whistle, for 3-4 minutes on high heat, then place cake tin in it. This ensures even heating and reduces risk of burning the cake.
- Close the lid without the pressure/whistle, lower the flame and let it cook until done (about 25-30 minutes). If the cake feels moist, cook for few more minutes.
- Take out the cake and let it cool on a wire rack.
For the chocolate glaze-
- Take milk in a pan and heat it.
- Add your chopped chocolate into the milk.
- Mix and stir till all the chocolate is melted.
Assembly-
Pour the chocolate glaze over your cake.
Decorate with walnuts. You can also use any nuts/ dried fruits/ fresh fruits for topping.
