Easiest Chocolate Pancakes Ever- Eggless with vegan, gluten-free options

Make the easiest ever pancakes with only 5 ingredients!

I love love love pancakes but didn’t make it too often at home. The reason being the long list of ingredients required to make them. Also I don’t consume eggs so finding an easy eggless recipe for a lot of things can be a task sometimes.

So I present to you an eggless recipe with minimum ingredients that is so easy and quick to whip up.

Also, I try to present to you the recipes that are the most forgiving. They are easy to mould and alter as per your preferences.

It can be made gluten free, vegan and even refined sugar free. I have added tips at the end.

And trust me when I say this, even kids can make it!

I don’t add vanilla essence to my pancakes since cocoa powder has enough flavour. But adding vanilla essence gives an extra kick of flavour (and smells heavenly too😁). So feel free to add a few drops.

These pancakes are not just super simple to make but also equally delicious and soul satisfying. They are light and fluffy and you won’t even notice it is eggless.

The key to good pancakes is cooking them correctly. Pour the batter on a hot pan, so that as soon as it hits the pan it starts cooking. Next, be patient and don’t rush it. No need to spread the batter too much. Pancakes are not supposed to be thin. Let it cook properly on the first side. Do not flip it until it is filled with bubbles.

Recipe: makes 4 pancakes

Ingredients:

  • 3/4 cup All purpose flour/maida
  • 1/4 cup cocoa powder
  • 2 tbsp powdered sugar
  • 1 tsp baking powder
  • 1 cup milk
  • 4-5 drops of vanilla essence (optional)

Instructions:

  1. In a bowl, take your dry ingredients
    i.e, flour, cocoa powder, sugar and baking powder.
  2. Mix them together.
  3. Pour milk and vanilla essence into your dry mixture.
  4. Combine well so that you don’t have a lot of lumps.
  5. Heat up a pan and grease it a little. No need to grease it if using a non-stick pan.
  6. Pour a ladleful of your batter on the pan.
  7. Let it cook until it has a lot of bubbles. Don’t rush it
  8. Flip it and let cook on the other side for about 1 minute.
  9. Repeat for rest of the batter.

Your pancakes are ready to devour!

Tips:

  • To make the recipe gluten-free, replace All Purpose flour with almond flour.
  • To make the recipe vegan, use any non-dairy milk like oat milk or almond milk.
  • To make the recipe refined sugar free, use jaggery powder.

Serving suggestions:

Since these pancakes are already flavoured with cocoa, you don’t necessarily need toppings for it. But if you wanna jazz it up, here are some ideas to serve your pancakes with-

  • My go to topping for pancakes is fruit- banana or strawberries work the best.
  • Maple syrup with pancakes need no explanation. lol.
  • Put on a dollop of ice cream on top, with a drizzle of chocolate sauce.
  • Top it with a generous spread of nutella.
  • Another yummy topping for pancakes is whipped cream. Heaven!

While fruit is the healthiest topping of all, I can never choose a favourite out of these. Each one is equally amazing and my mouth is already watering.
