Quick and easy vegetable spaghetti that tastes so good, you won’t even realize it’s loaded with nutritious veggies. This vegetarian pasta recipe has over 5 types of vegetables, including 3 greens. This spaghetti is so good, we could eat it every day.
Make the Absolute Wholesome Vegetable Spaghetti
This recipe is as versatile as it gets. You can add whatever vegetables you have lying around. It is absolutely precious to feed picky kids, (or even adults lol). It is a quick and fun way to add nutrition to their plate without compromising on the taste.
You can even swap out the spaghetti for any other pasta shapes and types. Make it even healthier by using a whole grain pasta or gluten free pasta.

My favorite thing about this vegetarian pasta is that it’s made 100% from scratch so you know every ingredient that goes into your body. That makes it absolutely safe and hygienic, which can be an issue sometimes while eating outside, esp for people with food allergies or intolerance.

I have used onions, capsicum, carrots, corn and broccoli. You can replace and use any other veggies that you have and like to add in your pasta. Seriously! You can add anything from fresh to frozen to canned. Everything and anything goes with it. Mushrooms, zucchini, bell peppers, olive, baby corn, spinach, squash, peas(I know!), and the list is endless.
Same goes for the cheese! I usually add mozzarella or a blend of mozzarella and cheddar. But Parmesan or regular processed cheese works absolutely fine as well.

Before we start, I would like to mention a few key points that I always follow:
- Blanch your tomatoes.Boil for few minutes with water until the skins of the tomatoes start to peel off.
- Peel them and grind into a puree.
- You can chop/puree your tomatoes but blanching gives the sauce a deeper better taste.
- Reserve pasta water. Before draining your pasta, reserve around a cup of pasta water to add it to pasta. This helps in case your sauce is too thick. Apart from that it also helps bring the sauce and pasta together as a complete dish.
Lets get started.

Ingredients:
- 2 tbsp Butter / Oil
- 7-8 cloves of garlic, minced
- 1 onion, chopped
- 1 cup tomato (blanched & pureed) See notes above for blanching
- 2 cup approx mixed vegetables as per choice. I used-
- 1 capsicum, chopped
- 8-10 french beans, chopped
- 1 broccoli, cut into small florets & boiled
- half carrot, grated
- 2 tbsp corn, boiled
- 1/2 tsp Black pepper powder
- 1 tsp oregano/pizza seasoning
- 1 tsp chili flakes or as per spice tolerance
- 2 tsp Ketchup/tomato sauce/red chili sauce
- Salt, to taste
- 1 tbsp cream
- 200 gm Spaghetti
- 1/2 cup Cheese, grated
Instructions:
- Take a pot and fill it with water. Put a big spoonful of salt in it and bring to a boil.
- Add spaghetti pasta to the boiling water and cook as per package instructions (reduce time by a couple of minutes if you are going to bake it).
- Drain and reserve some water for later.
- Meanwhile, heat oil/butter in another pan for the sauce.
- Add garlic and cook until fragrant.
- Than, stir in onions and saute till it turns translucent.
- Next, add broccoli and rest of your veggies (I used capsicum, carrot, beans and corn) and cook for 2 minutes.
- Put in salt and spices(black pepper, oregano and chili flakes), along with ketchup(optional).
- Add tomato puree and mix well.
- Let it cook on medium flame till the tomatoes are completely cooked.
- Next, mix in your cream.
- Add some of the reserved pasta water, making sure the sauce doesn’t get too liquid-y. It helps bring the dish together.
- Give it a taste test and adjust spices if needed. You can also add a pinch of sugar if the tomatoes feel too tangy.
- Now, throw in your boiled spaghetti and mix.
- If not baking, add cheese and cook for a couple of minutes until the cheese is melted.
- To bake, transfer your pasta to an oven safe dish. Sprinkle cheese on top. Give it a gentle stir. Don’t mix completely.
- Bake in a preheated oven at 200 C for 15 minutes.
Your bowl of heaven is ready!
Serve hot with a side of garlic bread or chilled drink. Or both! 🤣
